Jones Beach, he built three grades of restaurants. He said, “I don't see why those who've got the money, want to pay and want to have dinner at Jones Beach shouldn't have a nice place to have dinner. I want them to come here. There are a lot of micks here, but let's let nice people come and pay for their dinner.” He was very insistent about having a first-class chef and a corps of good waiters, with good service.
On the other hand, he jumped on the Casino in Central Park which was a very high grade, fashionable place. It was wiped out by Bob Moses. It was not far from where the great wisteria arbor is. There used to be two very fine, elegant, fashionable restaurants in Central Park. There was the one at McGowan's Pass and the other was the Casino. The Casino was on a kind of little rise very close by the great wisteria arbor. One entrance to the Casino was through the wisteria arbor. It was planned by the revered gentlemen who laid out Central Park to be an expensive and exclusive restaurant for the enjoyment of the people who drove in the park. It was like the restaurants in the Bois de Boulogne and on the Champs Elysee in Paris where there are two or three of the most expensive and beautiful restaurants in Paris. You pay through the nose, but it's a very delightful experience. They were not intended for the mothers of East Side children to eat sandwiches and coffee.
